Over the past year we have been working with our friend Nick Weston from Hunter Gather Cook to develop a knife specifically designed for game butchery.

Forged from stainless steel damascus with a VG10 core. These blades are nice and thick over the heel and taper heavily down both the tang and the blade. This results in sturdy blades with fine points for intricate work and a beautiful balance in the hand.

Sujihiki Carbon Steel Damascus

An edition of core-less Damascus slicers. The springy Swedish Steels used in these blades were originally developed for band saw blades and are known for their edge retention and for being tough and hard wearing. 

These are great for carving and slicing or filleting fish or meat.

Gyuto Nickel Damascus

A limited run of 8 Gyuto knives. Each blade has been laminated with 120 layers of Nickel and Iron with a Blue Paper Steel core, the grind is hollow towards the edge and has been thinned to a micro bevel for exceptional cutting performance.  A great blade for preparing meat and fish the Nickel and Iron Damascus cladding is not only beautiful but enhances the quality by reducing carbon diffusion during the forging process, giving optimal steel performance as well as being less reactive for easy maintenance. Each blade comes with a Saya made from fumed oak

A limited run of 5 Gyuto knives. Each blade has been laminated with 200 layers of Nickel and Iron and a subtle chevron pattern pressed in to the steel. The blade has a Blue Paper Steel core, the grind is convex and the edge has been thinned to a micro bevel for exceptional cutting performance.  A great blade for preparing meat and fish the Nickel and Iron Damascus cladding is not only beautiful but enhances the quality by reducing carbon diffusion during the forging process, giving optimal steel performance as well as being less reactive for easy maintenance.

Twisted Damascus Slicer
